To make the dipping sauce, stir together the broth, soy sauce, mirin, and salt. Transfer into two ramekins.
De-seed the cucumber and slice into very thin matchsticks or ribbons using a peeler. Slice the green onion.
Serve the noodles. Garnish with cucumber, sliced green onion, and sesame seeds. Anna likes hers also with some pickled ginger alongside.
